Our premium first extract soy sauce is made using twice the amount of soybeans compared to regular first extract, and is fermented for over 360 days.

The very first batch of soy sauce drawn during the brewing process is known as First Extract (or Toucho). Naturally brewed using traditional methods, this first extract offers a rich aroma, deep umami flavor, and a hint of sweetness. Just a small amount added to your dish brings out an unforgettable taste.
