頭水紫菜即是第一次成長採割的紫菜，之後再採割的依次叫二水，三水，四水。頭水紫菜產量少而營養價值高，是紫菜中的極品，食用口感最佳。

初水海苔（頭水紫菜）富含多種生命活性物質，如多糖、高不飽和脂肪酸、牛黃酸、類胡蘿蔔素、甾淳，海苔濃縮了紫菜當中的各種B族維生素，特別是核黃素和尼克酸的含量十分豐富，還有不少維生素A和維生素E，以及少量的維生素C。初水海苔中含有15%左右的礦物質，有維持正常生理功能所必需的鉀、鈣、鎂、磷、鐵、鋅、銅、錳等。其中含硒和碘尤其豐富。 初水海苔還可以作為糖尿病日的充飢食品，因為它不含糖分；另外，海苔作為高血壓、心臟病患者的保健食品也有極好的保健效果。
